Carolina Dogs are big
and bold, a taste sensation that explodes on the tongue.
No! It’s just a hotdog,
right?
Wrong.
Let’s start with the
homemade slaw.
Take half a cabbage.
Shred it and add ½ teaspoon of salt and 2 tablespoons of sugar. Let it sit in a
colander until all there’s no more moisture dripping out of it. It takes about
an hour. Next transfer to a large bowl and add ¼ cup of grated onion and 2½
teaspoons of cider vinegar. Mix then add ¼ to ½ cup of mayonnaise – enough to
coat but not drown your mix. Let sit for an hour.
Sounds wonderful.
Then there’s the
chili. Made with ground beef, a mix of water and beer, but no beans, this adds
heat and flavor.
Next the hot dogs.
Place in a single layer in your pan. Cover with water and warm through. After a
minute, drain off the water and cook the hot dogs until sizzling.
Time to put your yummy
flavors together to make something special.
Split your bread rolls,
and add the hot dogs. Spoon warm chili over them. Add mustard to taste. Then
top with your homemade slaw and a sprinkling of onions.
Eat and enjoy.
